Day 4, July 19th: Lunch

I'm always amazed to be drinking a 10+ year old bottle of wine for a simple family lunch. The Leclercs have a wine cellar, and they've been in the habit of putting away bottles for decades.  So when they want a bottle of wine they don't reach for the supermarket shelves, they retrieve one of the "ripe" bottles and enjoy the superior flavor and texture.  For them it's not so much a matter of age or value; they simply buy moderately-priced bottles and then wait until they're better.

 This bottle, a Bordeaux red, hails from 2001 (probably bottled when the Twin Towers were still standing, to give some perspective), and was deliciously complex with a pleasant, slightly tart, flavor.  

For dessert we again sampled Dominique's home made cassis sorbet, which is extremely flavorful and rich, one of the best sorbets I've tasted!  He told us that his favorite is making sorbet out of oranges, and instead of mixing it with sugar water he uses orange juice, and you can really smell the orange from the result
